Spices Of Delhi : Rustom's Parsi Bhonu

Rustom's Parsi Bhonu is a Parsi restaurant which started in 2015 and has made up quite a bit of fan following in a short period of time. It's run by Kainaz Contractor, who started it in memory of her late father. It's quite popular among locals who wish to taste authentic Parsi food and something offfbeat. But the beginning was not easy. It was a challenge to find good cooks and to train them to get the authentic flavours of a genuine Parsi home cooked food just right. Since Parsis in India are a very small community, getting the right ingredients was also not an easy task. But they overcame the challenges one by one and now Rustom's Parsi Bhonu is one of better known destinations in Northern India for good Parsi food. In this video, we talk with Kainaz and get an inside look of kitchen to record how some of their more popular dishes are cooked. Spices of Delhi : Bhogal Chole Bhature Waley

Bhogal Choley Bhature Waley is a small hole in the wall type of shop you will struggle to find even with Google Maps. It is located in small gaps in between the old buildings of Connaught Place and takes quite an effort to find. But all this labour is made worth it by the food. They are famous for their Choley Bhaturey , which is already a bit like the signature dish of Delhi and Choley Kulcha. There are probably hundreds of shops in the city which serve these food items. But both these food items here are very unique in terms of recipe, looks as well as flavours. They don't have a place to sit, just 1 or 2 tables where the patrons stand and eat or you can get them delivered to your home and office. These Bhature and Kulche are regular lunch items for many office workers in the area. Only drawback is that they close down shop around 3 pm once the lunch time is over. While we are more than just sure that they'll stay busy even if they're open till midnight, they follow their own rules of doing business which has been working pretty well for them for decades now.
